I think that, not having a soul, you (in a 'one' sense) would have trouble working out why anyone would want one. But, from a narrative point of view, Sam going 'meh' to a soul would not necessarily make a satisfactory arc (especially given previous seasons, which have seen him tending towards this anyway).
I also have thoughts about resemblances to Buffy, which I have difficulty articulating. Especially relating to actions of Giles and/or Castiel.
